Cool down this August with slightly sweet and dreamy Peaches and Cream Popsicles! Sprinkle sliced peaches with sugar, letting them steep in the beautiful liquid. Strain the peaches and save the juices… then combine the juice with Greek yogurt and a few peaches to create these decadent popsicles!
Peach season is about to come to an end, and this makes me incredibly sad because peaches might be my all-time favorite fruit.
When I was a kid, I have distinct memories of slicing up peaches to put atop my cereal in the mornings. If you haven’t tried this, I totally recommend it! I also have memories of peach cobblers and crumbles and pies and all kinds of desserts.
Ever since I found peaches at my grocery this summer, I’ve been enjoying them by the dozen. Which has actually become kind of ridiculous because, well, no normal person should go through several pounds of peaches in a month. Right?
Whatever the case, I had a few peaches left in my last batch and decided to make popsicles using them.
These Peaches and Cream Popsicles are super creamy, sweet (but not cloyingly so!) and are a brilliant way to finish off any peaches you’ve got sitting on your counter. Ooooooor finish off that peach nectar that was leftover after your failed peach pie attempt. *bats eyelashes innocently*
Whatever the case, these popsicles are super easy to put together and super enjoyable once frozen.
Here’s how I made ’em:
Ingredients
- 2 1/2 lbs. peaches, peeled and sliced
- 1 cup granulated sugar
- 1 cup peach nectar
- 6 oz. Greek yogurt
- 1 peach, sliced
Instructions
- Combine the peaches and granulated sugar in a large bowl. Let sit for one hour.
- Strain and save the juice from the peaches, and set aside. Use the peaches for a pie or another baked good. (Trust me... they're goooooood.)
- In a medium-sized bowl, stir together the peach nectar and the Greek yogurt until smooth.
- Place peach slices into the popsicle mold.
- Pour the peaches and cream mixture into popsicle molds. (Mine made 7 popsicles!)
- Freeze for 1 hour, then add the popsicle sticks. Freeze for an additional 4-6 hours, or until the popsicles are frozen through, then enjoy!
