Coffee Cake Pound Cake

Pound cakes originated in Europe in the first half of the 18th century and originally weighed 4 pounds! That was because a traditional pound cake contained one pound each of sugar, butter, flour and eggs.

Here’s my take on pound cake:  If I could get away with it, I would slice it horizontally about 1/4 of an inch below the crusty top, take the top part and leave the rest of it for everyone else.  Frankly, I love the taste of a pound cake, but find most of them too thick and a little on the dry side.  That’s why I usually make a simple glaze to add some moisture.

On the other hand, coffee cake is one of my favorite cakes because of the streusel topping.  What if a pound cake and coffee cake got married?  That’s exactly what happened in my coffee cake pound cake.

What is it about cake batter that makes people go crazy? For me, it is the memories of licking the spoon while helping my mother bake when I was growing up; and then being old enough not to have to wait to lick the spoon. How about when the batter is so good, that you are literally licking the bowl as much as you can without getting cake batter in your hair? No? That didn’t happen to you? Oh well.

The trend was set a few years back from the street trucks of Los Angeles. and has spread with fury across every major town in America. And, actually, even small towns too.

Easy Homemade Cilantro Lime Rice with Pop & Cook

I am in the thick of the summer here in Phoenix. We technically have at least three more months of mega hot days. So I am constantly looking for lunch ideas that I can make quick, easy, perfect for a hot day. I hate going out in the day just to get something to eat when it is so hot out.

So, I have been making some salads and sandwiches at home. I have been craving some burritos lately, but then I thought I should just make a burrito bowl. I can have my salad and burrito in one bowl.
