Fried Rice {Gluten Free}

Marcella Rose here.  Now if you are like me, you’re constantly trying to save money and what a better way to save than to use those leftovers! It’s always a shame to throw away perfectly good food, am I right? Now I don’t just like to warm up a leftover, though I have been known to do so, but where is the imagination in that?!  What I love is taking a leftover and making something extraordinary with it; something that makes the family run to the table.

So today I want to share with you an easy and quick recipe that will use your leftover white rice in a flash and with some panache!  I mean we all order take out and it seems that with every dish comes the ubiquitous box of white rice. You may eat a scoop, but I have never once used up all the rice.  Sometimes I make a rice pudding (I will share that recipe with you next time!) but most times I make fried rice.

What I love about fried rice is that your can serve it for every meal! If I serve it in the morning I like to baste an egg and place it on top; the gooey, runny yolk makes for a great sauce on the rice and really puts it over the top for the first meal of the day.  Serve this at a brunch and your guests will be stunned and love every bit of it.

Gorgonzola Butter

Gorgonzola ButterThere are not many things I love more than cheese. Sure I love my family, my friends, my pets and my boyfriend. But then in a very close fifth place, there’s cheese.

I want to put cheese on everything. There are so many different kinds, and each one complements different dishes perfectly.

One of my all-time favorite cheeses though, is Gorgonzola. I could seriously eat Gorgonzola with a spoon, every single day. I hear that’s frowned upon though, so I’ve resorted to sneaking it into some foods.

Happy Independence Day weekend!!

Break out the sparklers! After the patriotism and fireworks to celebrate our country’s independence, July 4th is all about the food.

You know it’s true. Patriotic holidays = overeating at its finest.

Firing up the grill, throwing on tons of juicy burgers, hot dogs & brats, steaks, ribs, and corn on the cob. Eating watermelon by the pound. Bowls of mayo-based salads as far as the eye can see.

Considering that french fries pair so well with all of the above food, I feel like they don’t get their proper due on the Fourth.

We could change (as a nation!) that with these Loaded Buffalo Chicken Baked Potato Fries!

Mini Bell Peppers - Stuffed & Grilled

For the past month or so I’ve been enjoying mini bell peppers in my salads and stir fries.  Is it just me or are they crunchier and tastier than regular bell peppers?  They sure are more colorful!

You know the old saying, “If you can’t stand the heat, get out of the kitchen?”  It’s been a reality around here the last week or so. We’ve had temps reaching over 100 for the past two weeks.  Summer arrived with a roar.  So, I’ve been conjuring up new recipes to cook on the grill.

Here in South Carolina, we have to deal with the heat and the humidity.  It’s like being in a sauna!  Humid heat feels much hotter than dry heat.  It does a number on my hair, too.  Curly hair frizzes and straight hair gets flat and limp.
