Easy Restaurant Style Salsa

Spring and summer is here and my favorite thing is chips and salsa. I really think that I have an addiction.  I love eating it all summer long. This recipe is so good, and crazy easy to make. I made it with canned tomatoes, but if I could, I would use home grown tomatoes.

I wish I grew my own tomatoes, because there is nothing like the taste of fresh out-of-the-garden tomatoes. For real! Mmmm, my mouth is watering just thinking about it.

But, since I don’t have fresh, I just used canned, and this salsa was totally delicious. You can make a ton of it, and as long as it is refrigerated, it should last up to two weeks.

Spring Farmers Market Tacos

Spring weather is finally beginning to show up and that means farmers markets are beginning to look bountiful after the meager winter months. To celebrate, I put together a little appetizer made entirely of farmers market sourced ingredients. It’s simple to make, aside from some precision chopping, and meets a number of allergy friendly requirements with the exception of the cream cheese. I’ve called it a taco, since that’s the best way to describe how to eat it. You grasp the sides, pinch together, and the cream cheese grips the radishes and chives.

You should be able to find all the produce at your local farmers market if spring weather has made it to your part of the world and if you’re lucky – you may find some fresh and locally produced cream cheese.  If you’ve never had fresh cream cheese, I would highly recommend seeking it out and using it instead of anything that comes in a box. Here in Seattle, my favorite dairy vendor is Glendale Shepherd – who can be found at the University District Market.

Loaded Sweet Potato Chips

About a year ago, my life changed.  I went on a girls weekend to Chicago to visit some of my best friends. where there is a girls weekend, you can guarantee there will be a LOT of food.  My friend Melissa brought some goodies, including CHOCOLATE COVERED POTATO CHIPS.  at first I was unsure…but after tasting them, I realized life would never be the same.  Um, wow.  They were so so good.  Who knew?!

It seemed like all of a sudden, everyone knew what I knew.  Chocolate covered potato chips were the perfect treat.  Trader Joe’s started selling them and I saw recipes all over pinterest.  People had caught on to the goodness.  Sweet and salty, what could be better? This week, I found something better.  Loaded sweet potato chips? Yes, please!!!
