I have always loved restaurants that serve mini-indulgences after a nice meal. They’re never too big and give you just the right amount of sweetness and satisfaction – without all the guilt. My favorite is usually a rich chocolate treat or a light tangy dessert like key lime pie.

I grew up having dessert after dinner and it was always something my brother and I looked forward to. It’s something I’d like to start with my 4 year old too, but I want it to be a healthy treat or a small indulgence so I can keep the sugar intake in-check before bedtime!

If you were to see my little one, you’d think he was the spitting image of my husband, but one thing he does have is his mother’s taste buds. We both LOVE peanut butter, chocolate and bananas. We could eat that combo for breakfast, lunch, dinner or dessert any day of the week and be super satisfied.

So, I decided to come up with a frozen treat that incorporated all of the above.

Using my crockpot little dipper to melt mini chocolate chips

I started off with a package of my favorite mini chocolate chips from Enjoy Life (because they’re free of gluten, dairy and soy) and melted them using my Crockpot Mini Dipper.

Then I lined a mini-cupcake pan with 12 Wilton baking cups and started to fill them up: chocolate, nut butter, banana and more chocolate. To add a bit more nutrition than standard peanut butter, I used my favorite organic 7 nut and seed butter, Nuttzo. Once all 12 were done I placed them in the freezer for 1 hour and then they were ready to go!

How to Make Chocolate Banana Nut Cups

Ingredients

  • 1 package Enjoy Life semi-sweet chocolate mini chips, melted
  • 3 Tablespoons Nuttzo Organic 7 Nut & Seed Butter (or your favorite nut butter)
  • 1 banana, sliced

Instructions

  1. Melt chocolate chips in Crockpot Little Dipper or melt in microwave safe bowl stirring every 30 seconds until completely melted.
  2. Line mini cupcake pan with baking cups.
  3. Using a spoon drop a small amount of melted chocolate into the bottom of each cup.
  4. Next, drop a small amount of Nuttzo butter on top of the chocolate, making sure it covers the chocolate layer completely.
  5. Take 1 slice of banana and place it on top of the Nuttzo in each cup.
  6. Top each banana slice with more chocolate and then place in freezer for one hour.
  7. Enjoy right away or place in sealed container and keep in freezer.
