Creamy Basil Parmesan Mashed Potatoes

Hey y’all! It’s Madison from Wetherills Say I Do! I’m here again with one of my favorite and easiest recipes for you today!

I was in denial when summer ended and now we are quickly approaching November. I’m so excited to be hosting my second Thanksgiving since being married this year. A lot of people dread having to cook for a group of people, but for me, the idea is just thrilling! I’ve already started to plan the various dishes I want to make.

Outside of Thanksgiving, mashed potatoes are one of my favorite sides. They are the epitome of comfort food to me. I’ve been eating them plain jane for years, with just butter, salt and pepper but recently I’ve branched out. I’ve been experimenting with different mashed potato combinations just like this recipe for creamy basil parmesan mashed potatoes. One of my favorite entrees to serve with potatoes is this Pistachio Crusted Chicken with Dijon Mustard.

Mashed potatoes are literally so easy to make which is what makes experimenting with them more fun! There are so many ways to spruce them up! This just happens to be one of my favorites right now.

Creamy Basil Parmesan Mashed Potatoes

Ingredients

  • 5 medium sized russet potatoes
  • 1 cup shredded parmesan cheese
  • 5-6 basil leaves, chopped
  • 1 stick of butter
  • 1/3 cup heavy whipping cream
  • Salt and pepper to taste

Instructions

  1. Put a large pot of water on stove and bring to a boil
  2. Meanwhile, peal potatoes and then quarter them
  3. Place potatoes into boiling water, cook through
  4. Drain potatoes and place into a stand mixer bowl or bowl to use hand mixer
  5. Mash potatoes with potato masher or mix potatoes with mixer on low
  6. Add in butter in chunks, continue mixing
  7. Add in parmesan cheese and basil
  8. Finally slowly pour in heavy cream while mixing until all ingredients combine
  9. Add salt and pepper to taste
  10. Serve immediately or keep in warm oven until ready to serve
