Mother’s Day is this Sunday and I wanted to make my Mother a very special brunch with all of her favorite things in one delicious open-faced sandwich.
I want to make my mom feel special, so I decided to invite her over to celebrate Mother’s day and make a special brunch for her like I did when I was little.
I wanted to make her favorite thing, an open-faced sandwich with runny egg, avocado, arugula and tomatoes on some marble rye toast. But these tomatoes are not just any tomatoes. These are some deep, darker, richer flavored tomatoes from NatureSweet. They are their new Eclipses tomatoes. They are a deeper shade of delicious and they were the perfect addition to a savory brunch.
I’ve always been a fan of any NatureSweet tomatoes. They have always tasted the sweetest. They work really hard to make the best tomatoes with the best groundbreaking methods. They also really take care of their workers and in turn the workers care about their work.
Ingredients
- Slice of your preferred bread
- Tomatoes
- Sliced Avocado
- Arugula
- Fried or poached egg
- Mayo or olive oil (optional)
Instructions
- It is totally optional to use mayo or olive oil. You can spread the bread with mayo, or to add moisture, toss the arugula in olive oil and lemon.
- Toast your desired bread, add arugula, avocado and sliced tomato Eclipses and top with egg.
- Serve and enjoy!
