Cauliflower is drizzled with a creamy, spicy cheddar cheese sauce to make a decadent and simple side dish that is ready in 30 minutes! This dish is loved by children and adults alike and is the perfect accompaniment for any meal.

When I was a kid, I was a pretty big fan of vegetables.

I didn’t like some (and still don’t, for that matter), but I mostly ate them without fuss. I think.

We were broccoli and cauliflower lovers… and I especially loved when my mom would sprinkle them with cheddar cheese, bake them for a few so the cheese got melty and delicious, and then serve them up hot as a side dish.

This recipe is a throwback to my childhood and those cheesy veggies… except I’ve elevated it a little bit. While it takes a bit longer than simply sprinkling cheese on top of a roasting veggie, I promise it’s worth the extra effort.

No-Churn Butter Pecan Ice Cream

While temperatures may be getting cooler outside, it’s never too cold for ice cream. I’m an all-year-round kind of ice cream person, and I love the fall flavors that start popping up in grocery stores around this time of year. Pumpkin, salted caramel, apple pie. Each year I make it my mission to try all the new ones I haven’t seen before.

One flavor that always makes me think of fall is butter pecan. It’s doesn’t scream fall, but it reminds me of pecan pie. There is even a local popsicle chain here where I live that has a butter pecan pop in the fall, too! It’s creamy and buttery, and has sugared pecans on the bottom. I decided it was about time to channel that into a homemade ice cream!

Kids get hungry and when they are hungry they want to eat NOW! They don’t feel like waiting around for you to whip something up. Especially when they get home from school. I wanted to think of something that I thought kids would love, and that would be super simple to prepare.

I love, love, love cheese. And I love fruit, and together, it really is a match made in heaven. I think that kids and adults alike would love this snack. This snack would be perfect for unexpected guests, or if you are having a dinner party too. It is easy, delicious and looks beautiful.

The kids don’t care how it looks, but this is a healthy snack that I know they will love and the sweetness of the honey brings all the flavors together.

Parsley and Cucumber Salad

When I was living down in New Orleans, I faithfully ate from food trucks since they were camped right outside my office building all day long. And like the rest of the food in New Orleans, the food from these trucks was absolutely delicious. One truck in particular, The Fat Falafel, shared an incredible parsley salad that I couldn’t get enough of. In this recipe, I replicated that salad to the best of my abilities. And boy is it good.

Using just four ingredients, this salad is sweet with just enough kick from the vinegar. I have to warn you though, this salad is for serious parsley lovers, as the main leafy ingredient is Italian parsley.
