Pho-Tastic Soup: Homemade Veggie Pho Soup Recipe

This fragrant soup is centered around the broth, the unique spices, like cinnamon, star anise, and coriander make this soup so rich in flavor.   Pho is one of my favorite soups, its simple ingredients are paired so perfectly with the distinct flavor of the broth. Most of the Vietnamese restaurants I have dined at do not have vegetarian broth accompanying their veggie pho. Pho is traditionally made with beef broth and this is the type of broth that is normally in the veggie ones as well, so I decided to master the broth so I could enjoy this soup in my humble abode.  I hope you enjoy!

Pho Veggie Soup

Ingredients

    For the Broth
  • 2 onions halved and broiled for 12 minutes
  • 5 carrots, roughly chopped
  • 1 bunch of celery, roughly chopped
  • 5 garlic cloves, halved
  • 5 mint leaves
  • 1 cinnamon stick
  • 5 star anise pods
  • 2 tsp of coriander seeds
  • The Good Stuff
  • 2 large carrots, sliced
  • 1 bunch of scallions, chopped
  • 1 jalapeño, sliced (omit if your not a fan of spice or remove the seeds)
  • 1 cup of basil leaves, torn
  • 2 cups of bean sprouts
  • 1 cup cilantro, chopped
  • 1 bunch of broccoli, chopped
  • 1 quarter of a lime
  • 1 package of rice noodles soaked in hot water for 10 min

Instructions

    Directions for broth
  1. Place all spices in a mesh tea bag and put into a pot of 6 quarts filtered water plus all the veggies. Let simmer for at least 2 hours.
  2. Remove all the spices and veggies, season with salt and pepper to taste.
  3. Directions for Soup
  4. Once ready to eat, place all "the good stuff" in the broth plus the noodles (minus the soaking water) and bring to a boil for 10 min, or until the noodles are completely cooked. Serve and top with a lil dash of Sriracha or Tamari and a squeeze of lime.
