Cocktails with the girls. These nights are my favorite, and unfortunately, as we get older, they are becoming fewer and farther between. With our families growing, coordinating our schedules and finding time to get away has gotten a lot harder.

But we try. We know how important it is to our friendships and keeping them strong through all of life changes.

We usually just meet up at a restaurant for some cocktails, but I decided to invite the girls over to my house for a little mixology lesson on one of my new favorite cocktails. I love watermelon, and I love kiwi, so I thought a little Watermelon Kiwitini would be the perfect cocktail to show the girls how to make. It is so easy, and so good.

It is just starting to cool down here in Phoenix, so I thought enjoying these cocktails on the patio with some chips and salsa, accompanied with laughs, would create the perfect couple of hours for my girlfriends and me to get away.

Watermelon Kiwitini

  • 1 oz Vodka
  • 1/2 oz Limoncello (or squeeze lemon if you don’t have Limoncello)
  • 1 Kiwi Fruit (cut into 1/4 pieces with the skin removed)
  • 2 oz Tropicana Watermelon
  • Ice

In a cocktail shaker, “muddle” the kiwi for 10 seconds. Add remaining ingredients, fill with ice and shake.   Fill a martini glass by straining ingredients and garnish with a slice of fresh kiwi.

Tropicana Premium drinks are the perfect mixer for at-home mixology; they’re so tasty! I love waking up to a glass first thing in the morning as much as I like using them as a mixer–they’re so much better than traditional mixers. And bonus! Tropicana Premium Drinks have ‘no artificial sweeteners’ and ‘no artificial flavors,’ and that is really important to me.

Girls night in unexpectedly ended up being almost more fun than going out for the night. We made it low key and the rules were dressed down and hair up. No expectations and just a fun night in with a couple of drinks, a couple of girls and a lot of laughs.
