Easy Paleo Crock Pot Chicken

My husband and I were recently given 28 days to move 1200 miles away . . . 28 days to find a house 1200 miles away, pack our current house, sell our current house, and then get our things to the new house 1200 miles away. I refused to live off fast food, especially since just 3 days before we accepted this challenge I had decided to do a whole 30. I know I’m a little crazy, and no, it didn’t go exactly as planned. But here’s a recipe that helped save time, stress, and me from the drive thru.

Mini Kiss Pies

Valentine’s day is right around the corner. Whether you’ll be spending it with friends, your kiddos, your hubby, or just your mom – we all need a fun, little dessert to share with those we love.

My favorite thing about these – as usual – is how easy they are to adapt to your favorite flavors. Or since it’s Valentines day, how easy they are to adapt to your loved ones favorite flavors. Even better, is if you have several people to treat, you can make a few with mint kisses, a few raspberry kisses, a few regular chocolate, or a few white chocolate. The white chocolate ones are super sweet!

Thai Spaghetti Squash

I’m quite bad at following recipes. I often find one that I have everything, but 1 item and so I decide to c hange it up and add my own items to replace it.

Then it becomes my very own creation recipe, and because I’m so organized I write it all out on a pretty recipe card and store it. Maybe that part is only in my mind . . .

But with this recipe I decided to actually follow a recipe down to an exact pinch of salt.

Shaved Brussel Sprouts Fruit Salad

A new year brings resolutions of good health, exercise, and clean eating. The gyms are packed, Target is out of yoga pants, and the grocery stores are out of vegetables. That leads us to brussel sprouts . . .

The vegetable has a sweet, almost nutty flavor, and are are surprisingly high in protein for a green vegetable Just one serving meets your needs for vitamin C and vitamin K for the day. That’s a win!

If you have to eat good then it should taste good, too. That’s really the only way those resolutions will hold on through February, right? This shaved brussel sprouts salad has apples, pears and cranberries mixed in and is tossed in a mustard dressing. Full of goodness and rich flavors remnant of fall, but still fresh and crisp for the dead of winter.
