A new year brings resolutions of good health, exercise, and clean eating. The gyms are packed, Target is out of yoga pants, and the grocery stores are out of vegetables. That leads us to brussel sprouts . . .
The vegetable has a sweet, almost nutty flavor, and are are surprisingly high in protein for a green vegetable Just one serving meets your needs for vitamin C and vitamin K for the day. That’s a win!
If you have to eat good then it should taste good, too. That’s really the only way those resolutions will hold on through February, right? This shaved brussel sprouts salad has apples, pears and cranberries mixed in and is tossed in a mustard dressing. Full of goodness and rich flavors remnant of fall, but still fresh and crisp for the dead of winter.
Ingredients
- Salad
- 1 lb. brussels sprouts, ends and outer leaves trimmed
- 1 pear, thinly sliced
- 1 apple, chopped
- 2 tablespoons raisins, chopped
- 2 tablesponns pepitas
- ¼ cup fresh cranberries
- Dressing
- 3 tablespoons extra virgin olive oil
- 1½ tablespoons apple cider vinegar
- 2 tablespoons apple cider
- 1 tablespoon dijon mustard
- salt & pepper
Instructions
- Combine dressing ingredients in a small bowl and whisk together. Set aside.
- Slice brussels sprouts thinly and place in a large bowl.
- Pour the dressing over the sliced brussels sprouts and toss to combine.
- Add remaining ingredients and toss together lightly.
- Season with additional salt & pepper to taste.

I never would have thought of this! We aren’t huge salad eaters in our home, but I’m always amazed by the creativity you can have with making a salad. This sounds so good! I need to learn to like brussel spouts!
