Homemade Vanilla Sugar

Homemade Vanilla Sugar // My Cooking Spot

When you’re baking, running out of vanilla extract is the worst. It’s such a key flavor component — what could you do? You could frantically scramble for your phone and Google possible substitutions. You could make a run to the store leaving behind partially-made batter and a preheated oven. Or, you could have a back-up plan.

Sometimes I just want a treat that I can’t get anywhere else. A snack that satisfies all of my cravings. From sweet, to salty, crunchy and creamy. I actually saw this snack on a food truck show feature on t.v. It was one of their most popular items. I decided to try it out myself, since I didn’t live in the town where the food truck was. And it includes butter! Who wouldn’t want to make this asap!

This is simple to make and there doesn’t need to have any specific measurements. This is a perfect snack or dessert, or even lunch because it is super filling. Maybe a good on-the-go breakfast? Why not?

Valentine’s day is right around the corner. Whether you’ll be spending it with friends, your kiddos, your hubby, or just your mom – we all need a fun, little dessert to share with those we love.

Even better, is if you have several people to treat, you can make a few with mint kisses, a few raspberry kisses, a few regular chocolate, or a few white chocolate. The white chocolate ones are super sweet!

Mini Raspberry Cheesecakes

January 28, 2015 By Madison Wetherill 3 Comments

I love party food. I’m all for crafting a meal, too, but I really enjoy making anything mini. So when we had a little get together for my husband’s birthday, I knew I wanted to make something mini. My goal for this year is to challenge myself with cooking. It started with making raspberry soufflés and now I can say I have also made mini cheesecakes, without having to use a springform pan!
