I love Mexican food. If you were to come into our home for a month you would see that on the average week we enjoy some type of Mexican themed or inspired dish several times. I just enjoy it all, the cumin, cilantro, and especially the kick of the chili powder. It is so comforting to me. And I have found that Mexican food is a go to for coking for a crowd. I made these stuffed peppers last week for some friends coming over, and they were a hit. This is an easy meal to make and it is packed with flavor!
In the summer, there are few things I love more than quick, simple meals that don’t require the use of an oven. Like a lot of you, I try to rely a lot on my slow cooker over the summer months to keep my house cooler. Grilling is also a summertime favorite and this side makes the perfect companion to most grilled dishes.
Sweet corn is easy to find in the summer, but this dish doesn’t have to be a summertime only dish. It’s perfect year round and it has simple ingredients, which is a must! I love using my slow cooker to make meals so that I don’t even have to be at the house to get the cooking done. [Read more…]

Mexican food is one of my all time favorite foods. If you want to see a happy girl, just sit me down in front of some chips, salsa, guacamole and a margarita over ice with salt. I am particular, and I know what I like. I am also very particular about my love of enchiladas. I have searched high and low for the perfect enchilada where I live. I have only found one place that that I love the enchiladas, but unfortunately for me it is 45 minutes from my house. I have made it a personal mission to figure out how to make the perfect recipe that uses good authentic ingredients.
