Slow Cooker Creamed Corn

In the summer, there are few things I love more than quick, simple meals that don’t require the use of an oven. Like a lot of you, I try to rely a lot on my slow cooker over the summer months to keep my house cooler. Grilling is also a summertime favorite and this side makes the perfect companion to most grilled dishes.

Sweet corn is easy to find in the summer, but this dish doesn’t have to be a summertime only dish. It’s perfect year round and it has simple ingredients, which is a must! I love using my slow cooker to make meals so that I don’t even have to be at the house to get the cooking done.

This corn is perfectly creamy, slightly sweet, and buttery. The perfect combination. You could very easily substitute the frozen corn used in this recipe for fresh corn, I just used what I had on hand. But with corn coming into season, it only makes sense to use the freshest ingredients.


We love to pair a side like this with some grilled chicken drumsticks. All we do is use one of our favorite seasonings to sprinkle over the chicken and then throw them on the grill. All along, your side is already ready to go!

Another thing I love about this dish is that because it’s slow cooked, it holds it’s temperature much longer than if you had just cooked corn on the stove or something like that. My husband is a stickler for food temperature, so I always worry that the food will cool off too quickly. This was perfect because we could eat this whenever we wanted to without it being cold!

Slow Cooker Creamed Corn

Ingredients

  • 3 bags frozen corn (enough to fill the slow cooker)
  • 8 oz. cream cheese
  • 1/2 cup of butter (1 stick)
  • 1 tablespoon of sugar
  • Salt and pepper to taste

Instructions

  1. Place corn in slow cooker
  2. Dice cream cheese and butter and place over corn
  3. Pour sugar over ingredients
  4. Add salt and pepper
  5. Mix ingredients
  6. Cook on low for 4-6 hours, stirring at least once half way through.
