Hey y’all! It’s Stephanie from Sustaining the Powers here again today. If you are a regular over at my blog, you’ll know that I share a lot of gluten-free recipes. I’m not actually gluten-free myself, but many of the people who are near and dear to me are gluten-free. That means that I almost always need a quick gluten-free treat for a church gathering or a dinner party. If I had to eat one kind of savory food for the rest of my life, it would be freakin’ canned tuna.

I’m dead serious, here. Tuna salad sandwiches, tuna & noodles, tuna croquettes, tuna cakes, tuna burgers, tuna casserole…I’ve eaten and loved it all. If there’s ever a day that I can’t think of what to eat, I turn to my trusty canned fish friend.

It’s not for everyone, of that I’m sure. I’ve had so many people turn their nose up when I mention having it for lunch – of course, that’s the same reaction I have when someone mentions olives.

Baked Chicken Parmesan

Now that the kids are back in school, all the after-school activities are in full swing. Whether it’s sports or piano practice, it doesn’t leave much time for dinner prep.   

One of the midweek meals I rely on often is Baked Chicken Parmesan. It’s fast, delicious and goes well with so many different sides. I usually serve it alongside Fettuccine Alfredo, a green salad and garlic bread.  It’s so versatile and extremely easy to make.

Helpful Hint:  When I’m rushed even more than usual, I buy Alfredo Sauce in a jar instead of making it from scratch.  My family can’t tell the difference.

I won’t name names, but I have a few picky eaters in my family. This is one chicken dish that they all agree on so its frequently my go-to meal when I’m short on time.

Cool down this August with slightly sweet and dreamy Peaches and Cream Popsicles! Sprinkle sliced peaches with sugar, letting them steep in the beautiful liquid. Strain the peaches and save the juices… then combine the juice with Greek yogurt and a few peaches to create these decadent popsicles!

Peach season is about to come to an end, and this makes me incredibly sad because peaches might be my all-time favorite fruit.

When I was a kid, I have distinct memories of slicing up peaches to put atop my cereal in the mornings. If you haven’t tried this, I totally recommend it! I also have memories of peach cobblers and crumbles and pies and all kinds of desserts.

Ever since I found peaches at my grocery this summer, I’ve been enjoying them by the dozen. Which has actually become kind of ridiculous because, well, no normal person should go through several pounds of peaches in a month. Right?

Whatever the case, I had a few peaches left in my last batch and decided to make popsicles using them. [Read more…]
