Vegan Thanksgiving Roast with Cranberry & Wild Rice Stuffing

November 12, 2015 By Erin Kennedy Leave a Comment

Gardein Holiday Roast

With the holiday’s coming up, that does not necessarily mean that you waistline needs to expand. It is absolutely possible to not gain any weight, actually lose weight, or keep up with your dietary needs, and still enjoy a delicious meal to celebrate the holiday’s.

If you are vegan, vegetarian, or just like to go meatless once in a while, you have got to check out Gardein and thier holiday roast with cranberry and rice stuffing.

Let me just start off by saying, that this roast is completely meatless, but when it was baking in the oven, oh my goodness. It brought the entire smell of the holiday season throughout the house. As soon as I cut into it, the smell of traditional stuffing was so delicious, I started salivating. The hubs said he couldn’t want to see what this roast tasted like.

Cranberry Pistachio Cheese Ball

Cranberry Pistachio Cheese Ball - a perfect holiday appetizer | Get the recipe on MyCookingSpot.com!

Thanksgiving is probably the only holiday I can think of where appetizers are never really needed.

I mean, think about it. If you’re part of the Feast Cooking Team, you’re “tasting” all day, to the point where you can barely eat a full plate come dinner time. And, if you’re on the Football & Beer Crew, you’re most likely sneaking in the kitchen during refills and swiping any bites you can, leaving no need for a table of nibbles to keep you satisfied until dinner is ready.

In the case of this Cranberry Pistachio Cheese Ball, though…you may want to just have it in the kitchen to curb your turkey- or yam-snacking. I promise, you’ll still be hungry for stuffing later!

Pumpkin Spice Oatmeal - My Cooking Spot

I don’t care what anyone says. A season of pumpkin-flavored food is fine with me. I don’t believe in going overboard, no, but a little here and there is totally fine! I say we stop hating because it’s delicious. Lattés, toffee, oatmeal…

Yes, oatmeal! Every Halloween night should begin with the perfect breakfast jumpstart. This Pumpkin Spice Oatmeal is just that. I am a recent oatmeal convert, but this is my new favorite thing to eat in the morning.

Easy Bourbon Apple Cider

Bourbon Apple Cider | Feast + West for My Cooking Spot

This is Susannah from Feast + West, here with a favorite fall beverage!

I know it’s autumn when I have my first sip of apple cider. Sweet, fruity and spicy; it’s a guilty pleasure I cherish throughout the season.

But who has time to sit around and mull their own? Sometimes, I’d rather cheat and buy a gallon of fresh cider from a local orchard or at the farmers market. One of my favorite things to do is mix it into cocktails. Bourbon is probably my favorite spirit of all, and it pairs so well with apple cider.
