Easy Spinach & Veggie Dip with Old London Melba Toasts®

I absolutely love hosting get togethers. I’m not sure at what age I started enjoying being the host, but it’s certainly engrained in me by now. I love everything from setting the menu, to creating the invites (even if it’s just a Facebook invite), to decorating. I get that balled up nervous energy about an hour before but once guests start arriving, I’m in my happy place.



I’m always looking for quick recipes that are completely shareable. Dips are some of my favorite go to items because everyone can munch on it. But what does every dip need? The perfect dipper! I have always preferred crackers or chips for dips and when I got the opportunity to try these Old London Melba Toasts® I was really excited!

 

These crackers are perfect for dips because they are slightly seasoned and have the perfect amount of crunch- almost like you’re dipping croutons into your dip! YUM! Old London Melba Toasts® and Snacks come in 15 different varieties and flavors and have fewer calories than many cracker brands, making them great snacking selections for everyday eating or entertaining. 

 

I love that this dip is semi-homemade too, so I can feel better about what I’m putting into it! I’ve grown up having this dip for parties. It’s perfect for summertime because it’s a cold version of a spinach and artichoke type dip. It’s definitely refreshing on a hot day!

Easy Spinach & Veggie Dip with Old London Melba Toasts®

Ingredients

  • 10 oz spinach, cooked, cooled and squeezed dry, then chopped
  • 1 container (16 oz.) sour cream (or you can substitute greek yogurt!)
  • 1 cup mayonnaise
  • 1 package Knorr® Vegetable recipe mix
  • 1 can (8 oz.) water chestnuts, drained and chopped (optional)
  • 3 green onions, chopped (optional)
  • 1 package Old London Melba Toasts®

Instructions

  1. Combine all ingredients and chill about 2 hours.
  2. Serve with Old London Melba Toasts®
