This might be the ugliest dish I’ve shared with y’all to date.

It might not be pretty, but I can promise y’all that it’s delicious… and really, that’s all that matters. (Says the girl who was weirdly selective of cookies and every other food when she was a kid because I only wanted to eat pretty things. I know. Good thing I grew up and realized that beauty had nothing to do with taste, right?)

You might be wondering, “What is this Four Layer Baked Sweet Potato that Erin is telling us about?”

It’s an incredibly simple lunch or dinner to put together… and it’s warm and comforting at the same time!

Sweet potatoes are a favorite vegetable of mine, and I especially love eating them during the fall and winter months because they’re so hearty.

Top your baked sweet potato with some baked bacon (yes, baked so it’s not all greasy from the frying pan), fresh spinach and a fried egg, and you’re good to go!

Here’s how I made mine:

Four Layer Baked Sweet Potato

Ingredients

  • 1 sweet potato, baked
  • 2 slices bacon, baked and cooled
  • 1 cup fresh spinach
  • 1 egg, fried

Instructions

  1. Cut open the sweet potato.
  2. Place the spinach inside the sweet potato, then sprinkle the bacon over the spinach.
  3. Top the fresh fried egg on top of the rest of the ingredients, and enjoy warm!
