A simple yet delicious spinach salad with honey crisp apples, mandarin oranges, chopped pecans, dried cranberries, all topped with a homemade citrus poppyseed dressing.

Hi all! It’s Lauren back from Lauren’s Recipe Box ready to share with you one of my favorite salads of all time! I don’t know about you, but Winter is one of the hardest times for me to stick to a healthy diet. Maybe it is the cold weather, holidays, or maybe it is just an excuse to be bad šŸ™‚ Either way, I am trying to make some healthier choicesĀ this month and this honey crisp winter salad is the perfect start! A bed of baby spinach loaded with thinly sliced honey crisp apples, mandarin oranges, chopped pecans, dried cranberries, and the BEST citrus poppyseed dressing… This salad will make you forget all about those Chick-fil-a waffle fries šŸ˜‰

This past weekend I spent three glorious days with 3 of my best friends for a girl’s weekend. While we felt sad that some of our other friends couldn’t make it, we had an amazing weekend!

We were in Grayton Beach, and the weather could not have been any more perfect.Ā The sun was brightly shining, the wind was blowing, and the white sandy beaches were hardly crowded.

Every morning, we woke up without alarm clocks, had a leisurely breakfast, took a bike ride, then trekked out to the beach with our chairs, towels, books, ice chest filled with water &Ā adult beverages, and lunch/snacks. [Read more…]

Rainbow Carrot Cutlets (little patties with hidden veggies that are perfect for your picky eaters!)

The summer always makes me think of bright beautiful colors like rainbows, sunflowers and oh-so-delicious food!

I feel like I have always had a love affair with pretty food. The more colorfulĀ – the more I want to eat it!

When I was younger, it was mostly bright fruits and crayola-colored icing that got my attention, but as I cameĀ into my twenties, I really started turning my attention to vegetables. I started noticing theĀ deep purple eggplant, those sunshine yellow spaghetti squash and those bright orange bell peppers.
