It’s hard to believe that the winter months are almost upon us. (OK, I feel like I should specify here since some of y’all are dealing with some winter-like conditions right now. I live in Texas, and winter arrives around mid-December most of the time… so we’ve yet to experience anything too crazy yet.)

Either way, I don’t know about y’all, but this time of year is when I am in search of something comforting for dinner.

Today, I have the perfect comfort dish for y’all. It can easily be made the morning of, seared off, tossed into the slow cooker to do its thing all day and then it’s ready for you to eat when you get home from work.

It’s a quick dish to pull together, and it’s super cozy for a chilly winter’s night.

Carrots were one of my favorite snacks as a kid, and I could easily take down a bag of baby carrots in one sitting because they were so darn good.

Then my sister discovered she was allergic — highly allergic — to carrots… and we all stopped eating them in her presence.

I’m always looking for new and delicious side dishes. I always have a long list of entrees I want to try, and then I fall flat on the sides and either just throw together a salad, mixed vegetables, rice or noodles. But I’ve switched my focus as of late to make sure that the sides I make are just as delicious as the entree itself. These Maple Butter Carrots were the start of that.

Rainbow Carrot Cutlets (little patties with hidden veggies that are perfect for your picky eaters!)

The summer always makes me think of bright beautiful colors like rainbows, sunflowers and oh-so-delicious food!

I feel like I have always had a love affair with pretty food. The more colorful – the more I want to eat it!

When I was younger, it was mostly bright fruits and crayola-colored icing that got my attention, but as I came into my twenties, I really started turning my attention to vegetables. I started noticing the deep purple eggplant, those sunshine yellow spaghetti squash and those bright orange bell peppers.
