I love me any kind of baked good, especially on the weekend… and especially for breakfast.

As I was thinking about Mother’s Day and all the recipes my family and I have made in celebration of my mom over the years, I realized something: We always made dessert. And our attempts at baking only worked about half of the time, even though our hearts were in the right place.

While I’m sure we made her breakfast, too, I have no recollection of this. At. All.

So today? Today, I’m talkin’ Mother’s Day breakfast and a pretty darn simple baked good that you can whip up in no time to celebrate your mama.

It’s hoooooooooot.

Like, slap-in-the-face as soon as you walk out the door humid heat.

Typical for Florida, really, but extremely unwelcome. It’s only May! This doesn’t bode well for the actual summer season, I imagine.

I suppose it’s a good thing I received an ice cream attachment for my Kitchen Aid mixer last year! I can see it getting put to use over the next few months. Ugh, few, what am I talking about. It won’t cool off until October!

Ok so yes, this recipe is Mexican-inspired. And yes, yesterday was Cinco de Mayo. But who says you can’t post a Mexican-inspired recipe the day after Cinco de Mayo?

No one has told me not to, so I’m doing it. And I think you’ll be really happy.

This Jicama Salad is perfect for the warmer months to come. There’s no need to turn on your oven. You only need a little time to chop all your veggies.

Happy Cinco de Mayo! If you’re looking for an easy and festive dessert to make tonight, you have come to the right place. Mexican hot chocolate is a favorite flavor profile of mine–cinnamon, vanilla, and the heat of cayenne combine with chocolate SO beautifully. I love working that flavor profile into more than just hot chocolate. These Mexican Hot Chocolate Brownies with Dulce de Leche are rich, decadent, and sure to be a hit with your family.

The brownies and the dulce de leche are both incredibly easy to make, using simple ingredients you probably have on hand. I hope you enjoy them! 🙂
