Coffee Infused French Toast

Breakfast has always been a favorite of mine. Sadly, I have an aversion to eggs, so my options are usually limited for breakfast meals. Luckily, I found my breakfast soulmate: French toast. I’ve spent years eating French toast for breakfast but up until recently, it never occurred to me to combine my favorite breakfast and favorite drink. These muffins are gluten free and so good for you! The only sugar is in the chocolate chips, so to make them even healthier you could use dark chocolate or omit the chips.
