Well, hey there! It’s Becca again from Two Places at Once. I’m so excited to share my latest recipe with y’all today. Is it just me, or has life been a little crazy lately? My husband recently graduated with his PhD (yay!) so that’s been the focus of our life lately. Working towards his defense, preparing for graduation, hosting family, and traveling has made life a little more hectic. Don’t get me wrong, all of this is good. But, it does mean I have less time for other things in life. One of those things has been time in the kitchen.
When life is a little more hectic or I know I will have less time to cook, the slow cooker is my go-to. It’s been a God send for me! I always look for recipes that have minimal prep work and allow the slow cooker to do most of the work. This slow cooker honey ginger lime pork fits the ticket exactly!
This pulled pork is heavenly. It’s sweet and tangy with a citrus kick. The flavors all meld together to help take a regular pork dish to the next level. I also love how versatile this pork is. You can serve it as a sandwich, on top of a pile of rice, or even on it’s own! And, it makes plenty for leftovers. It’s a win all around!
Since I know there will always be some element of stress to life, I like to have have my slow cooker handy. This slow cooker honey garlic lime pork is now in my arsenal of recipes to count on when I’m stretched for time. I bet it will be a go to recipe for you too!
Ingredients
- 2 whole pork tenderloins
- salt and pepper
- 1/2 cup honey
- 1/4 cup soy sauce or coconut aminos
- 1 tablespoon Worcestershire suace
- juice of 1 lime
- 2 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 2 tablespoons corn starch
Instructions
- Place the pork tenderloins in the slow cooker and season with salt and pepper.
- In small bowl, whisk together remaining ingredients. Pour the marinade over the pork. Cook on low for 6-8 hours or on high for 3-5 hours.
- Once the pork has reached an internal temperature of 140, remove it from the slow cooker. Shred with two forks and then place back in the slow cooker. Serve as desired.
