This pretty Strawberry Cream Cheese Poke Cake is a simple Spring dessert. Perfect for Easter or just because!
Sometimes recipes don’t turn out as planned. And sometimes, they turn into completely different recipes! I was trying to decide what to make for my recipe on My Cooking Spot this month, and decided to use the fresh strawberries I had in the house.
I decided to create a recipe for strawberry truffles, but my strawberry filling was just too liquidy. Rather than make a huge batch in order to fix it, I decided to find another way to use it. And tada, this Strawberry Cream Cheese Poke Cake was born!
Strawberry Cream Cheese Poke Cake
Ingredients
- 1 (9x13) white cake mix, plus the eggs, water and oil as called for on the box
- 3 cups sliced strawberries
- 8 oz cream cheese
- 1 cup powdered sugar
Instructions
- Mix the cake mix and bake according to the directions on the box. Allow to cool for 20 minutes.
- While the cake is cooling, place the sliced strawberries, cream cheese and powdered sugar in a food processor or blender and blend until smooth.
- After the cake has cooled for 20 minutes, use the round end of a wooden spoon or similar utensil to poke holes into the cake at about 1-inch intervals.
- Pour the strawberry mixture over the cake. Cover and refrigerate for 2 hours. The strawberry filling on top of the cake may be uneven, so spread it with a spatula so that it creates and icing for the cake. Slice and serve, storing any leftovers in the refrigerator.

Oh this seriously looks SO good. I’ve never made a poke cake but have always wanted to! I have made cupcakes similar to this before so I know this will be so good!
