Sometimes recipes don’t turn out as planned. And sometimes, they turn into completely different recipes! I was trying to decide what to make for my recipe on My Cooking Spot this month, and decided to use the fresh strawberries I had in the house.

I decided to create a recipe for strawberry truffles, but my strawberry filling was just too liquidy. Rather than make a huge batch in order to fix it, I decided to find another way to use it. And tada, this Strawberry Cream Cheese Poke Cake was born!

Strawberry Cream Cheese Poke Cake

Ingredients

  • 1 (9x13) white cake mix, plus the eggs, water and oil as called for on the box
  • 3 cups sliced strawberries
  • 8 oz cream cheese
  • 1 cup powdered sugar

Instructions

  1. Mix the cake mix and bake according to the directions on the box. Allow to cool for 20 minutes.
  2. While the cake is cooling, place the sliced strawberries, cream cheese and powdered sugar in a food processor or blender and blend until smooth.
  3. After the cake has cooled for 20 minutes, use the round end of a wooden spoon or similar utensil to poke holes into the cake at about 1-inch intervals.
  4. Pour the strawberry mixture over the cake. Cover and refrigerate for 2 hours. The strawberry filling on top of the cake may be uneven, so spread it with a spatula so that it creates and icing for the cake. Slice and serve, storing any leftovers in the refrigerator.

    Oh this seriously looks SO good. I’ve never made a poke cake but have always wanted to! I have made cupcakes similar to this before so I know this will be so good!
