I’m a sucker for a good salad. It’s so easy to throw together a salad that’s filling, delicious, and not boring. This salad fits all of those criteria.
I love the combination of kalamata and olives and sundried tomatoes, and include both of them in all of my Greek-inspired recipes.
I also added in cucumbers and walnuts in addition to the olives and tomatoes, and the combination was magical.
Because the olives and tomatoes have so much flavor, I only topped my salad with olive oil and sea salt. But, if you’re looking for more pizzazz, you could top this salad with your favorite Greek dressing.

Sundried Tomato, Olive, Cucumber and Walnut Salad
Ingredients
- 4 cups fresh spinach leaves
- 1/4 cup sundried tomatoes
- 1/3 cup kalamata olives
- 1/4 cup chopped walnuts
- 1/2 cucumber, cubed
- Olive oil for drizzle (optional)
- Sea salt (optional)
Instructions
- Toss all ingredient together in a bowl
- Enjoy!
