I’m a big fan of easy, healthy and hearty meals. A meal doesn’t need to take two hours to meet any of those criteria. I also like meals that can be eaten as leftovers. Roasted vegetables are my favorite things on Earth. I could eat roasted vegetables every day, and pretty much every vegetable tastes good roasted. Ok, so not celery but every other one I can think of is delicious.

They’re basically person. Roasted vegetables are simple to make. They taste great, and it’s super easy to eat a lot of vegetables in one sitting since the vegetables cook down so much. Mexican Fried Quinoa ~ a different take on a great dish to use your leftovers 

Mexican Fried Quinoa

It’s safe to say that leftovers are the best thing to happen to my fridge during a busy week.

When you’re too busy to cook, having leftovers can save you from ordering take out or picking up fast food.

Something that’s really helpful is to make extra of things I can use later in the week. For example, I always double the amount of quinoa or brown rice that I make. Fried rice is the best for cleaning out your fridge. Seriously, just throw all the veggies in your fridge in the skillet and call it a day.

{Lighter} Chicken Fajita Casserole

I have a special place in my heart for quinoa and for many reasons. You can even say I am tad bit obsessed. And for good reasons!  A quick cooking, gluten free whole grain that is a nutritional powerhouse. It contains more antioxidants, protein and fiber than any other grain; which is the perfect reason for me to substitute any recipe that calls for rice, couscous and even pasta!

When I think of winter, I immediately curse Mother Nature, kidding, sorta. No really; I immediately think of comfort dishes.
