Oddly enough the fall is more about salads for me than any other season. Our social schedule seems to pick up a bit, life isn’t the laid back days of summer anymore, and the holidays are right around the corner. So when it comes to easy, quick, healthy meals I can throw together on a weeknight or before we run to an event on the weekends – salads is our choice.
To me the most important part of a salad is not what you put in it, but what you top it with. Your dressing gives it that final flavor and juiciness that will accent everything you’ve chosen to fill it with. Make an amazing salad and top it with a bad dressing – even worse a bad for you dressing – and you’re not letting it reach it’s full potential.
This salad is one of my favorites especially for fall since it has the roasted pecans and crisp apples. So making an apple cider vinaigrette is the perfect compliment. And ,of course, it comes together easily and quickly for that busy fall schedule. One of my favorite additions is some grilled chicken to make it a full meal.
Ingredients
- Dressing
- 2 tablespoons apple cider
- 2 tablespoons apple cider vinegar
- 1 teaspoon kosher salt, or to taste
- black pepper
- 6 tablespoons extra-virgin olive oil
- Salad
- 2 cups salad mix
- 1/2 cup to 1 cup of roasted pecans
- 1 cup blue cheese
- 2 apples, cores and sliced
Instructions
- pour apple cider and vinegar into bowl and whisk together
- add salt and as much black pepper as you like
- whisk is olive oil
- toss with salad mix
- top with pecans, blue cheese, and apple slives
- serve immediately
