Brussels Sprouts are a rockstar veggie. I am a huge fan of them. But not so long ago, brussels sprouts weren’t welcomed on my plate with open arms.

I know I shouldn’t judge a book by its cover a veggie by its smell, but it’s hard not to. Boiled brussels sprouts smell like old shoes in my opinion, and that’s just wrong.

Pumpkin “Ice Cream”

 A healthy, three ingredient soft serve “ice cream” that is perfect to celebrate the Fall season even if it doesn’t feel like Fall yet,

 As much as I want it to, it just doesn’t feel like Fall here yet.

The high on Thursday was 91°… yep, October 2nd and it’s 91°

So while I’d love to be making big batches of soup and turning on my oven to bake casseroles and doughnut holes and what not, I just can’t bear it yet.

Not until it gets under 75° do I really start to get into the Fall season foods.

Breakfast Quinoa

I love love love breakfast, and I get on these kicks where I eat the same breakfast every single day for like a year.

My senior year in college and the first year I was in graduate school, I had a bowl of oatmeal and a few egg muffins {or a hard-boiled egg} every day.

Coconut Almond Granola

I absolutely love granola! It’s one of my favorite breakfast-snack hybrids.

It’s crunchy, sweet, and delicious.

However, it’s one of those sneaky little devils that is presumed to be really healthy but it’s typically packed with calories, sugar, and fat.

Most store-bought granola has the same nutritional value as a cookie… I don’t know about you, but for the same nutritional value, I’d much rather eat a cookie than granola.

The best way to remedy that problem is to make your own granola, and fortunately, it’s surprisingly easy.
