Lemon Creme Nanaimo Bars - these no-bake bars will knock your socks off!

This is the ultimate nanaimo bar recipe! The lemon filling gives such a nice fresh flavor to these nanaimo cookie bars.

I recently attended a surprise party for a dear friend who was turning 40. She is a well-loved person, and lots of friends and family members were there to celebrate with her.

When her husband asked each person to bring a food item to share, I immediately thought of these Nanaimo Bars.

That’s because, in the first place, these bars are one of my favorite things EVER. They are an angelic pan of chocolate and coconut no-bake goodness. Straight from heaven, I kid you not. The Canadians totally got this one right.

Happy first day of Spring! It’s Lauren here from Lauren’s Recipe Box. The warm weather is finally here to stay (fingers crossed) in East Tennessee! This past weekend was a slow one at our house and I must say it was nice that way. We celebrated my mother-in-law’s birthday with Mexican food and coconut cupcakes. Is there a better combination?!

Tropical Bliss Strawberry Shortcake

Call me a snob if you must, but I just can’t settle for normal desserts anymore.

If you frequent my blog at all (it’s right here in case you haven’t been,) then you can tell by looking at the recipes I share. It’s not that I don’t appreciate them…don’t get me wrong, I totally do!

I just like to mix it up a little. Take this Tropical Bliss Strawberry Shortcake, for example. It’s shortcake elevated, and is totally worth the minimal amount of effort required to throw them together.
