This weekend unofficially kicks of the summer season…yay!! And what says “hello summer” better than some fruity recipes!? Pineapples are all the rage this year when it comes to clothing, home décor, and pretty much all things summer. Today, we are jumping on this bandwagon and sharing some of our favorite pineapple-inspired recipes.
Tropical Bliss Strawberry Shortcake
Call me a snob if you must, but I just can’t settle for normal desserts anymore.
If you frequent my blog at all (it’s right here in case you haven’t been,) then you can tell by looking at the recipes I share. It’s not that I don’t appreciate them…don’t get me wrong, I totally do!
I just like to mix it up a little. Take this Tropical Bliss Strawberry Shortcake, for example. It’s shortcake elevated, and is totally worth the minimal amount of effort required to throw them together.
Hummingbird Cake
I finally got around to baking a Hummingbird Cake! Yay me! Now, some of you are probably saying, what in the world is a Hummingbird Cake? Well, I would have said the same thing a few years ago but, since then, I have had a piece in almost every restaurant that advertises it in the Florida Keys. I kept telling myself I was going to make one day, and it would be even better than any I had tasted, and that day finally came. And I couldn’t be happier with the results (although my waistline might complain a little because it’s so hard to resist!).
The cake turned out rich, spicy, a little nutty and full of the fruity goodness of bananas and pineapple. It’s a tropical treat not to be missed!
Grilled Hawaiian Pizza
Use the grill to cook your pizza on a hot summer’s day! This Grilled Hawaiian Pizza is sweet, salty and savory at the same time. It is a summertime favorite and oh-so-easy to make at home!
Pizza is one of my favorite foods, and we’ve been making our own favorite pizza combos at home for years. I love throwing various ingredients on top of a pie and seeing how they turn out. I also love homemade pizza the night before any road race.
Unfortunately, it’s been so darn hot that we haven’t wanted to turn on the oven for any length of time.
