Fried Rice {Gluten Free}

Marcella Rose here.  Now if you are like me, you’re constantly trying to save money and what a better way to save than to use those leftovers! It’s always a shame to throw away perfectly good food, am I right? Now I don’t just like to warm up a leftover, though I have been known to do so, but where is the imagination in that?!  What I love is taking a leftover and making something extraordinary with it; something that makes the family run to the table.

So today I want to share with you an easy and quick recipe that will use your leftover white rice in a flash and with some panache!  I mean we all order take out and it seems that with every dish comes the ubiquitous box of white rice. You may eat a scoop, but I have never once used up all the rice.  Sometimes I make a rice pudding (I will share that recipe with you next time!) but most times I make fried rice.

What I love about fried rice is that your can serve it for every meal! If I serve it in the morning I like to baste an egg and place it on top; the gooey, runny yolk makes for a great sauce on the rice and really puts it over the top for the first meal of the day.  Serve this at a brunch and your guests will be stunned and love every bit of it.

The dog days of summer are almost here, and I don’t know about y’all, but I am increasingly spending more and more time indoors because it’s just that hot outside.

Gone are the days of taking leisurely afternoon walks.

Gone are the days of gardening in the sunshine.

If you need me, chances are I’m hiding indoors.

Strawberry Honey Moscow Mule

I’ve recently discovered that there is a difference between ginger beer and ginger ale. Ginger beer doesn’t have alcohol, and ginger ale is usually easier to find. I’ve always wondered why people just don’t take the short cut when making Moscow mules. I understand now.

Ginger beer is brewed and fermented. Ginger ale is just soda with ginger in it.  Since Ginger beer isn’t carbonated it has a much more gingery flavor. And just because it says beer, don’t let that fool you. No alcohol plus way less sugar than Ginger ale.  It’s a win-win really. And for the alcohol to make this Moscow mule a real mule, we just use something most of us have in our cabinets already anyway – vodka.

Southern Country Ham & Red Eye Gravy

When the rest of the world has been out splashing in the pool and enjoying the summer weather, I have been laying on the couch watching hours of TV. If you know me at all, this is so NOT my personality! I am still recovering from my first trimester of pregnancy and definitely craving comfort food and lots of rest.

One of my favorite shows is Mind of a Chef on PBS. Season 2 hosts Chef Sean Brock from Tennessee and follows him as he travels the south showcasing the incredible history and rich traditions of southern cuisine.

I’m so fascinated by shows like Mind of a Chef because I love learning and growing in my understanding of culinary techniques and also the history of certain dishes. In a couple episodes, Chef Brock mentioned and cooked a very traditional southern breakfast of country ham and red eye gravy. I was so inspired by his attention to detail and respect for his food that I had to try it for myself!
