I have always loved baking. I didn’t discover a love of cooking until after I got married three years ago, but baking, I’ve always loved. Granted, my definition of “baking” before was using boxed mix, I still always loved baked goods more than anything else. As I’ve grown in my cooking skills, my baking skills have grown too. I remember the first time I tried to make muffins. I used a complicated recipe that required lots of unnecessary steps and in the end my muffins didn’t turn out at all. Didn’t even make it to the oven. So now, even though I love baking, I still prefer easy recipes that truly anyone can bake from. Good food just simply doesn’t have to be complicated.
Banana Bread Doughnuts (Gluten & Sugar Free)
Since the moment we walked into our apartment from our honeymoon, my husband has been asking for doughnuts. The idea of getting a homemade version of his favorite treat was a huge thrill for him. I pinned away many hours looking for fun new recipes to try, along with the newlywed dinner recipe collecting and home decorating “research” I was doing.
But, despite my recipe collecting, my sweet husband continued to consume greasy, frosted doughnuts from the corner shop for the last couple of years. I didn’t have a doughnut mold! Finally this Christmas I put it on my gift list… as a gift to him of course!
It’s priceless watching his eyes light up as he notices a batch of freshly baked doughnuts on the kitchen counter.
Strawberry Lemonade Muffins

It’s officially the springtime!
The spring always makes me think of strawberries, even though I could happily enjoy strawberries year-round. (And I kind of did during the final portion of pregnancy… they were just SO good with everything!)
You know what else I think about during the springtime?
Lemonade.
Guinness and Chocolate Milkshakes with Jameson Cream

Whenever I think of St. Patrick’s Day, I think of early morning parades — I did spend my college years in Louisiana, after all — and Irish drinks… namely Guinness and Jameson.
It’s a random combination, especially since I don’t particularly enjoy Guinness or Jameson on their own and never drank them at a parade.
However, I love using them in dishes.
And these milkshakes? Well, they’d make a spectacular St. Patrick’s Day dessert… or pick-me-up during the day, if you’re into that kind of thing.
