Goat Cheese Stuffed Peppers

Snacking is my favorite meal of the day. I tend to eat a lot of smaller meals throughout the day, so I like to think of myself as a bit of a pro when it comes to snack recipes. I love the typical fruit or even a handful of chips, but preparing a quick snack is even better. The best part about most snacks that take a few minutes of prep work is that they’re usually the best recipes to keep on hand for party appetizers too. These goat cheese stuffed peppers are a versatile little recipe that can serve as a great snack or appetizer.

Is watermelon a fruit or vegetable? Basically, it’s a fruit and a vegetable.  It’s complicated! Should we call it a fruveggie?
