Classic Homemade Focaccia

There are many things I enjoyed about working in an Italian restaurant in high school and college. Chowing down on leftover focaccia after service was over was one of those things. Focaccia is one of my favorite breads because of it’s unique texture. It’s buttery and crisp on the outside and soft and chewy in the middle. The soft, spongey center makes it perfect for dipping in seasoned olive oil–the perfect appetizer for any Italian meal.

I absolutely love hosting get togethers. I’m not sure at what age I started enjoying being the host, but it’s certainly engrained in me by now. I love everything from setting the menu, to creating the invites (even if it’s just a Facebook invite), to decorating. I get that balled up nervous energy about an hour before but once guests start arriving, I’m in my happy place.

I love finding new ways to do old things.  I also love finding new appetizers that you can eat with your hands.  I entertain frequently and am always on the look out for hor d’oeuvres that I can set out for my guests, which don’t require a plate and fork to eat.  It’s fabulous when all can be eaten just using your hands!  Today I am going to share with you a classic Italian appetizer but with a “hands only” twist!

Mexican food is one of my all time favorite foods. If you want to see a happy girl, just sit me down in front of some chips, salsa, guacamole and a margarita over ice with salt. I am particular, and I know what I like. I am also very particular about my love of enchiladas. I have searched high and low for the perfect enchilada where I live.  I have only found one place that that I love the enchiladas, but unfortunately for me it is 45 minutes from my house. I have made it a personal mission to figure out how to make the perfect recipe that uses good authentic ingredients.
