Double Chocolate Peppermint Cookies

In just 10 days, mothers (grandma’s, aunts, uncles, dads, whoever!) everywhere will be busy making cookies for a man that doesn’t look like he needs any more cookies. But the children in our lives simply can’t take the risk of what might happen if no cookies are left for Dear Ol’ Saint Nick.

In our house, Santa really likes chocolate and peppermint – more than he likes chocolate and peanut butter. Specifically, he likes the chocolate and peppermint cookies from Lands End. But there is nothing better than home made! So Mrs. Claus set out to create some cookies that could compete . . .

The winning recipe ended up being even better than those lands end cookies. Homemade cookies = soft and chewy cookies! Even Santa agrees those are better than hard, crispy cookies!

Double Chocolate Peppermint Cookies are perfect for any cookie swaps you might have  – even ones you might have to send through snail mail! Hopefully they arrive in time to stay soft and chewy!

As always, I like to have short cuts around so if the Mrs. Claus  at your house is pressed for time, just use a cake mix 1/2 cup oil and 2 eggs.

Double Chocolate Peppermint Cookies

Double Chocolate Peppermint Cookies

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 4 crushed candy canes

Instructions

  1. Preheat oven to 350 degrees F
  2. Mix butter, sugar, eggs, and vanilla until light and fluffy
  3. Add in flour, cocoa, baking soda, and salt to butter mixture
  4. Mix in chocolate chips
  5. Drop teaspoons full on un-greased cookie sheet
  6. Bake for 6-8 minutes until almost cooked through
  7. Remove from oven and add candy cane pieces to top and bake for 2-3 more minutes
