Kale and I have a history of misunderstandings.
In fact, it wasn’t until we moved to Dallas that I cooked kale at home. I’d tried kale at restaurants, and it wasn’t my favorite, so I never attempted to make it on my own… and then we joined a CSA.
With our CSA that fall and winter, we received bunches upon bunches of collards, mustard greens and kale. I, obviously, had no idea what to do with them, but that quickly changed since we had so many that needed to be consumed.
This kale salad is one of those go-to recipes that is oh-so-simple. It’s also perfect for the wintertime, as kale and mandarins are currently in season.
Here’s how I make the salad, complete with a homemade orange vinaigrette:
Ingredients
- 1 bunch kale, chopped
- 2 mandarin oranges
- 1/2 cup toasted pecans
- 4 slices bacon, fried
- 1/4 cup extra virgin olive oil
- 3 tablespoons freshly squeezed orange juice
- 1 tablespoon local honey
- Salt and Pepper to taste
Instructions
- In a large bowl, toss the chopped kale with the oranges, pecans and bacon.
- In a mason jar, combine the ingredients for the vinaigrette, capping the jar and stirring until mixed.
- Pour the dressing over the kale salad, toss and enjoy!

I’ve roasted kale to make kale chips a couple of times and then pretty much forgot about it. Thanks for reminding me to buy some kale next time I’m grocery shopping. Your kale salad looks like the perfect dish to add to my healthy eating menu. That orange vinaigrette sounds good, too. Pinning for sure! Thanks for sharing.
I love kale in pastas, soups or even as kale chips! I’ve never had it on a salad though but I tend to like spinach salads the best, so maybe I’d like this! That orange vinaigrette looks so good, too! I need to try this ASAP! 🙂
