In these last few days of summer I have been craving fresh fruit! My husband and I love to indulge in a little sweet each night but have had lots of discussions about our health and not wanting to consume Sonic ice cream multiple times a week šŸ˜‰

This fresh and simple dessert came to mind one night when I was craving something sweet but didn’t want to spend more money at the store! Because who is going to spend the time making shortcake when you could just sub already made biscuits and get just as good of a dessert? Not this girl.

Have you been looking to add to your recipe box for meatless Monday? Or just new ideas for your vegan diet? Gardein is your new best friend. There are so many different recipes you can create with all the wonderful options from Gardein.

I love sandwiches. I think they may be my favorite food. However, since I have become pregnant, I am not supposed to eat cold deli meats or cold chicken sandwiches because of possible bacteria growth. With these vegan chicken tenders, I don’t have to worry at all about any of that because it is meat-free.

I love a little kick to my sandwiches. I also love the cool crunch of coleslaw. I decided to make one of my faves. JalapeƱo lime coleslaw for this sandwich. Fresh french roll and tangy swiss cheese. Yum! I think this will definitely be one of my pregnancy must have cravings!

Fall is almost here! Half of the country is probably getting the luxury of wearing sweaters, scarves and boots and being totally cozy. The rest of us in the southern half of the country are ITCHING to be able to wear some layers and eat and drink pumpkin without feeling totally weird about it. Nonetheless, fall is inevitably coming to the entire country in just a few short weeks! That means it’s time to get going on fall meal planning. There are thousands of fall dessert and fall drink recipes out there, but we all have to each real meals sometimes, so we came up with 16 of our favorite fall dinner recipes! Beet Salad on a Stick

I know it’s hard to believe, but the holidays are right around the corner. Before we know it, we’re all going to have ugly sweaters on the couch, party dresses in the closet, champagne chilling in the fridge, and holly draping the staircase. There will be parties galore, and you’ll probably need a dish for each and every one. Today I’m here to help with an easy little appetizerĀ – Beet Salad on a stick!

When youĀ assemble the salad, I find it’s best toĀ skewer the beet first followed by the goat cheese. I found this is the best order, as the goat cheese tends to crumble a bit. So by putting theĀ cheese in the middle you’re salad tends to stay together better.

If you know me, you know I love recipe that can be changed up, so here’s my suggestions. Since this is a salad . . . you can add lettuce. I’ll let that bomb sink in for a few seconds. I’d put two pieces surrounding the cheese or just serve it over a plate of lettuce. And finally, I sometimes – if I have it around the house –Ā like to add some orange juice to the dressing to give it a little bang. Each bite should have all of the above for an explosion of flavor! Yum!
