Easy Homemade Guacamole

June 10, 2015 By Susannah Leave a Comment

Easy Guacamole you can make in a jiffy all summer long // My Cooking Spot

Susannah from Feast + West here with another summer appetizer. It’s just not summer without a few chip-and-dip recipes, if you ask me. Chips, salsa and guac are the quintessential party foods at every summer get-together.

It’s taken me a long time, but I have finally mastered my easy guacamole recipe. It’s quick and only requires a few ingredients, though it’s a good idea to plan ahead when you make guacamole. The key is ripe avocados — they mash the best and give the most flavor — so you’ll need to buy them in advance. (Hint: I always use two forks to mash the avocados into a mostly smooth consistency with a few chunks remaining.)

Skillet Alfredo

The pioneer woman just has the best recipes, you guys. Especially for days when you just don’t care what the calorie count is. Really, does she make anything that’s not delicious? The answer is no.

In my house, we have a rule that if I cook then my husband cleans. He gets the easy end of the deal with this meal because it only uses one skillet. He begs to differ because he has to scrub. His words, of course, not mine. He’s such a man. But he’s a good one and he’s nice to look at so I’ll keep him.

The recipe seems complicated when at first read, but it’s quite easy. So I guess, it’s pretty easy for both of us. But let’s not tell my husband that, ok? Ok!

Goat Cheese Stuffed Peppers

June 5, 2015 By Madison Wetherill Leave a Comment

Snacking is my favorite meal of the day. I tend to eat a lot of smaller meals throughout the day, so I like to think of myself as a bit of a pro when it comes to snack recipes. I love the typical fruit or even a handful of chips, but preparing a quick snack is even better. The best part about most snacks that take a few minutes of prep work is that they’re usually the best recipes to keep on hand for party appetizers too. These goat cheese stuffed peppers are a versatile little recipe that can serve as a great snack or appetizer.

Green Bean Salad

A delicious make-ahead salad that’ll make you excited about eating summer veggies

Green Bean Salad

Happy Summer!

Ok so I know it’s not officially summer, but summer starts Memorial Day in my opinion and that makes me oh so very happy.

Among many things {think outdoor activities involving water}, all the fresh fruits and veggies are my favorite things about summer.

I have a tendency to follow trends in my veggie-loving ways. In the winter, I make soups on soups on soups. You’ll never hear “no soup for you” in my kitchen.
