Skinny Cheesecake Dip

When you’re eating healthy during the day . . . and wine is off-limits during the week . . . you need something to take the edge off. You just need something that feels bad for you. But it can’t actually be bad for you.

Enter: Skinny Cheesecake Dip. I’m okay with having this in my refrigerator waiting for me when I need something sweet. It’s no-bake, it comes together in minutes, and you can make it sugar-free or low-fat, deepening on your preference.

Plus? It’s cheesecake and it’s dip. Dip means you can eat as much as you want in one sitting, right? Endless cheesecake!?!?

Look at how fluffy that is? Don’t you want to just get some strawberries to dip?? Or just your finger?

How To Make a Perfect Poached Egg

May 1, 2015 By Erin Kennedy Leave a Comment

I love poached eggs. However, this type of egg has not been seen much at my house because I have always been intimidated to make them. I always thought they were way more difficult than they were.

These photos are from my very first attempt at making a poached egg, and it turned out perfectly, and it was not difficult at all! I love a poached egg so much, and now I make them all the time. Poached eggs with bacon, poached eggs on asparagus, poached eggs with tomato and avocado, and of course, now I can make eggs benedict!

Gluten-Free Banana Pancakes

April 29, 2015 By Susannah Leave a Comment

Make gluten-free breakfasts fun! Gluten-Free Banana Pancakes are a dream. | My Cooking Spot

Hello again! It’s Susannah from Feast + West, and I’m back with a simple breakfast recipe that’s both gluten-free and delicious. Yes, it’s possible!

Pancakes always bring up special memories of making breakfast with my dad. My mother cooked most of our family meals, but Saturday breakfast was for Dad. I remember waking up early and helping him stir and pour. There would be French toast or waffles or pancakes and always bacon — but never eggs. (Dad’s choice, not mine!)

I recently found myself with some almost-too-ripe bananas and decided to put them to use in a new way that might get Dad’s approval: banana pancakes. (Hey, does anyone hear Jack Johnson playing?) With a little coconut oil and almond flour, these pancakes are a dream to make. And eat. Man, is it Saturday yet?

Easy Chocolate Chip Walnut Cookies

First, let’s talk about this giraffe plate. It’s amazing, from anthro, and I only asked for the single plate for Christmas because the rest of the set could not keep up with this one so it is all by its lonesome in my cabinets.

Secondly, my nonna, the best cook I know, learned to cook when she got married and moved out. Every night she would call her mother and tell her what she had in the fridge and her mother would tell her how to cook it. I am not married but I have moved out and so I call my nonna for recipes or my mom. This recipe comes from my mom. Neither of us know where it comes from but it’s easy and delicious. Both of us love walnuts in our desserts–our cookies and our brownies–but feel free to leave them out.
