Hey y’all! Stephanie here again. I love a good late night snack recipe. Lately, I’ve been munching on apples and sharp cheddar cheese or a Strawberry Goat Cheese Toast when I’ve stayed up far too late editing photos or writing my next blog post.  I was sorting some old emails the other day when I came across this Peanut Butter Yogurt Dip recipe I’d sent to myself a few years ago. I knew I just had to make it as my next late night snack and share it with y’all!

Back when this recipe was invented, my hubby and I had challenged each other to give up processed sugar for 40 days. I’ve got a salty tooth (is this a real thing? If not, I’m inventing it. Definition: noun, opposite of sweet tooth.) so giving up most sweet things was really no big deal to me. Hubby, on the other hand, LIVES for sweet things. I learned (the hard way) during the first week of our marriage that if I wanted to keep any of my baking chocolate chips for use in cookies they HAD to be hidden away and clearly marked: “Please do not eat me. :)”

So, needless to say, a few weeks into the challenge was when Hubby really started dying for something sweet. On our next date night, I headed into the kitchen and whipped up this fruit dip for him with a few things we had on hand to surprise him with a “dessert.” (A small amount of honey isn’t “processed sugar.”) We gobbled it all up in a couple minutes flat on some apples and bananas, and went back to make a second batch. I think it became an every other day treat for the rest of the 40 day challenge, and I sent myself the email as a reminder to my future self to use the recipe in the future. Thank you past self!

This is one of those recipes that you can whip together in under 5 minutes with ingredients you probably have on hand if you need something for guests dropping by, a lunchbox snack, an appetizer for a party, a dessert, breakfast bar, or a late night snack. It’s pretty much always time for some Peanut Butter Yogurt Dip. I honestly never really measure my ingredients for this one, so it’s all pretty much to taste. You can add more honey or start with a vanilla, honey, or salted caramel Greek yogurt if you want a sweeter dip, or you can add more peanut butter if you want something better suited to dip celery or pretzels. It can also be made nut-free if you need to with something like sun butter. Enjoy!

Peanut Butter Yogurt Dip

Ingredients

  • 1/2 cup plain Greek yogurt (or use vanilla or honey flavors for more sweetness)
  • 1/4 cup creamy peanut butter
  • 1 tablespoon honey (more for sweetness)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Fruit, celery, or pretzels (for dipping)

Instructions

  1. Combine ingredients well in a small bowl.
  2. Serve alongside fruit, celery, or pretzels for dipping.
