A peanut butter lover’s dream! Peanut butter cookies, stuffed with peanuts, chocolate chips, and peanut butter cups make these babies truly ULTIMATE!

Ultimate Peanut Butter Chocolate Chip Cookies

I have a love/hate relationship with peanut butter.

Basically, I hate that I love it so much. It’s my go to after the gym when I don’t have a post-workout snack ready, since it’s packed full of protein. It’s also heavy on fat content (even though it’s healthy fat!), which is where the hate comes in, because there are days I could sit down with a spoon and a jar and go to town with no hesitation.

I digress. For that reason, aside from my post-gym snack or a lazy weekday lunch, I usually save it for desserts like these Ultimate Peanut Butter Chocolate Chip Cookies!

Shaved Brussel Sprouts Fruit Salad

A new year brings resolutions of good health, exercise, and clean eating. The gyms are packed, Target is out of yoga pants, and the grocery stores are out of vegetables. That leads us to brussel sprouts . . .

The vegetable has a sweet, almost nutty flavor, and are are surprisingly high in protein for a green vegetable Just one serving meets your needs for vitamin C and vitamin K for the day. That’s a win!

If you have to eat good then it should taste good, too. That’s really the only way those resolutions will hold on through February, right? This shaved brussel sprouts salad has apples, pears and cranberries mixed in and is tossed in a mustard dressing. Full of goodness and rich flavors remnant of fall, but still fresh and crisp for the dead of winter.

Southwestern Black Bean and Sweet Potato Soup

One flavor combination I just cannot get enough of is Southwestern flavors paired with sweet potato. That smoky, spiciness found in Southwestern cuisine with the subtle sweetness of the sweet potato is just to die for. I’ve made black bean and sweet potato enchiladas before, and it occurred to me to tweak my favorite enchilada soup a bit to bring the sweet potato enchiladas into a soup form. The results were fantastic, and I think I have a new favorite soup. My toddler really digs it too, so that’s a plus.

I can't get enough of the smokey, sweet, spiciness of this Southwestern sweet potato and black bean soup!

Kale and I have a history of misunderstandings.

In fact, it wasn’t until we moved to Dallas that I cooked kale at home. I’d tried kale at restaurants, and it wasn’t my favorite, so I never attempted to make it on my own… and then we joined a CSA.

With our CSA that fall and winter, we received bunches upon bunches of collards, mustard greens and kale. I, obviously, had no idea what to do with them, but that quickly changed since we had so many that needed to be consumed.
