Cinnamon Apple Chips

Cinnamon Apple Chips

Hi all, Cat from The Rustic Willow here. Happy St. Patrick’s Day! I hope you all are eating loads of green things today. I’m here to share a recipe with you that uses green apples–so I guess I’m in the holiday spirit.

I’ve been on such a health kick lately! I think it’s due to the fact that I recently moved to Colorado and everyone has such an active lifestyle here–it’s contagious!

Usually when I try to eat healthier, snacking is my downfall. I can prepare healthy meals all day long, but I’m always craving some ice cream or chocolate. I decided to finally tackle apple chips for a healthy snack instead! I’ve always wanted to try them but I kept putting them off. I’m not sure what I was afraid of, because these are so easy to make!

The reason I kept putting these off is because I don’t have a mandoline, and I didn’t want to buy one. Every recipe I read said I basically needed one. But I was rebellious: I made these babies without one. And ya know what? They were delicious.

So I’m here to tell you that you do not need a mandoline to make delicious, crispy apple chips!

Cinnamon Apple ChipsFirst, preheat your oven to 200 degrees. Then, line a cookie sheet with parchment paper (I tried making some without parchment paper and they stuck to the pan–so make sure you line the pan).

Slice your apples as thin as possible–the thinner, the crunchier. If you have a thicker slice it may not be very crunchy when you finish baking them.

You can use as many apples as you like, but when you bake them you want them to be in a single layer on your sheet, so plan accordingly. Of course you can use multiple cookie sheets and cook multiple batches at once. I used 3 apples.

Cinnamon Apple ChipsIn a small bowl, mix together 2 tablespoons of brown sugar and 2 tablespoons of cinnamon. Dip each side of your apple slice into the mixture.

Arrange in a single layer on your cookie sheet.

Cinnamon Apple ChipsBake for 90 minutes. Take out, flip each apple slice over. Bake for another 90 minutes.

Don’t open the oven! Turn off the oven and let the oven cool down with the apple chips in there–leave them for 2 hours minimum (you can leave them in there overnight if you want).

Now, take them out and enjoy the delicious, crunchy, healthy cinnamon apple chips!
