Smokey Chocolate Chip Caramel Cookies

April 6, 2015 By Rebekah Stark Leave a Comment

I am in the camp that chocolate chip cookies should not have very many chocolate chips. I prefer to love on all the flavors. However, I realize I’m one of the few. So after much searching, I found a secret ingredient that makes them good enough for me and good enough for everyone else . . . liquid smoke.

As the name suggests, liquid smoke is a liquid that tastes like smoke—it replicates the flavor produced by smoke-curing without actually requiring you to smoke anything. When shopping for liquid smoke, be aware that some brands add seasonings, flavorings like molasses or vinegar, or colorants like caramel. Liquid smoke should just be smoke and water, and there are brands that are exactly that simple.

Bacon Hashbrown Breakfast Pie

April 3, 2015 By Madison Wetherill Leave a Comment

I absolutely love fresh produce. I mean, most people do, right? When I studied abroad in Italy, I really started to love a lot of new vegetables because the produce was so fresh over there. In North Carolina, we have this thing called the Produce Box, where each week you can choose to have a box of produce picked by local farmers delivered to your house. I have been skipping the last few weeks because we have been out of town like crazy. But last week, I accidentally received a box instead of skipping one. It was packed full of leafy greens, cherry tomatoes and strawberries.

The thing about leafy vegetables (and fresh produce in general) is that it can go bad pretty quickly if it’s left unused. So after receiving a whole lot of kale and tomatoes, I tried to think of something I could make to use up the veggies before they went bad.

A springtime spin on a classic English dessert, this creamy, tangy Strawberry Lemonade Fool is perfect for any occasion!

A springtime spin on a classic English dessert, this creamy, tangy Strawberry Lemonade Fool is perfect for any occasion!

I’ve never been a huge fan of April Fools’ Day.

People can be pretty awful to one another on April 1st, pranking and lying and joking, all for the sake of fun. But for people like me, it can get pretty bad.

I’m not naive, but I do tend to fall in to the “gullible” category from time to time, and my friends take advantage of that.

At least I’m no April Fool. It’s the one day of the year I can at least see it coming.

This dessert, however, is in fact an April Fool. A Strawberry Lemonade Fool, to be exact.

What’s a Fool, you ask? Read on! [Read more…]

Roasted Brussel Sprouts

March 31, 2015 By Nina B Leave a Comment

brusselI have been trying to both cook and eat healthy. There isn’t really a program so much as eating the things and cooking the things that I know will nourish me. Food isn’t all good or all bad. For me, it’s about realizing that with my health, food is definitely medicine but it can also be a delicious medicine–once I reset all my processed sugared taste buds.

To be honest, I love roasting veggies. But Brussel Sprouts? I don’t know about that one. And yet, when my dad made these. I was hooked and recreated them many times since them. They are great as a side and I won’t life, once or twice, I’ve eaten them as a full meal. It wasn’t on purpose. They are just so filling and delicious!
