Hi everyone! It’s Jenna from A Savory Feast. I’m back with another yummy recipe for you! This time I’ve got an easy dinner that is perfect for when you need something fast.


When it comes to simple meals, I love anything that can be made in one dish! Not only does it save time while you are cooking, but you also have a lot less cleaning up to do afterward.

I’m sure you would agree, any recipe that saves time in the kitchen is a winner! When you’ve had a busy day, the last thing you want to do is spend a lot of time cooking and then cleaning up afterward.

This recipe is one I recently came up with for my family, and it’s one I’m going to be adding to the regular rotation. It’s made with fresh tomatoes and fresh spinach, so you get lots of nutrition packed in.

I always love meals that are colorful, so this is perfect for me. Usually the more colorful the dish is, the more flavorful it is!

One-Dish Italian Chicken and Rice

Ingredients

  • 1 lb boneless, skinless chicken breasts, cubed
  • Salt, pepper, garlic powder, onion powder and italian seasoning to season
  • 3 tablespoons oil (I used coconut oil but olive oil will work, too)
  • 1 cup tomatoes, diced
  • 2 cups fresh spinach leaves
  • 2 cups chicken broth
  • 1 cup jasmine rice
  • 1/2 mozzarella cheese

Instructions

  1. Season the chicken with salt, pepper, garlic powder, onion powder and italian seasoning. Heat the oil in a large skillet on high heat. Brown the chicken for 1-2 minutes on each side and lower the heat to medium high.
  2. Add in the tomatoes and spinach and sauté for 3-5 minutes or until the spinach turns dark and wilted.
  3. Add in the chicken broth and rice and bring to a boil. Once it's boiling, cover the skillet and lower the heat to low. Cook for 10-13 minutes or until rice is cooked.
  4. Add in the mozzarella cheese and stir. Serve immediately.
