Summer Caprese Pasta Salad

I’m not a fan of mayo so I’ve always been one to miss out on summer side dishes like pasta salad and potato salad. It’s just one of those things I’ve come to accept and don’t worry too much about anymore. But, the other day my husband and I were out to lunch and he ordered a caprese pasta salad. Y’all have to understand that anything with mozzarella and tomatoes is my default choice at a restaurant. So I knew I had to try it. Luckily this particular blend was made without mayo and after only one bite I knew I had to recreate it and see if I could make a pasta salad dish I’d actually enjoy!

  The one bad thing about cooking for your friends is spending all that time in the kitchen while you could be out laughing and spending time with them. Ok, cleaning up is all that great either, but it’s worth it to spend time with friends. So when friends are over in the summer months, I like to come up with easy grill recipes. Pineapple Delight Trifle

Pineapple Delight Trifle is one of those recipes where I took a little bit of this and a little bit of that from several recipes and created a new and better recipe.  Sometimes I just love to play with my food and come up with an exciting and tasty recipe and that’s exactly what happened when I created this delightful concoction.

This is another no-bake dessert because, really, who actually bakes in the summer time?  Not this girl! Every dessert I’ve made lately seems to have ice cream or whipped cream as an ingredient.  I just crave real simple, real cold foods this time of the year. [Read more…]
