Easy Slow Cooker Chili

I’m a football fan, but not for the reasons most other people are football fans.

Sure, I was raised in a football-loving home (Go Bills!), but as a kid, when your family throws gameday parties, all you know is that there’s going to be some damn good food available to nibble when no one is looking.

Chips with dips, bite-sized everything, everything under the sun off the grill, and – in my house at least – Easy Slow Cooker Chili! It was usually made to top off the footlong franks everyone was gobbling down during halftime, but I always chose to settle down with a warm bowl in my room, away from the shouting and cheering.

It’s a great day for a holiday, don’t you think?

Happy Thanksgiving to all of my fellow Americans! Today is one of my favorite holidays as a foodie, for obvious reasons – it’s all about eating!! I love taking a classic recipe and getting creative with it – putting my own spin on it, and really making it my own. I can’t wait to be able to share those kinds of recipes with my future kids and grandkids, and maybe one day in the future, they’ll call my recipes classics.

Of course, Thanksgiving is an all-day event, spent mostly in the kitchen and over the stove. But before you toss that turkey in your oven, why not treat your family to an equally impressive breakfast? Summer Caprese Pasta Salad

I’m not a fan of mayo so I’ve always been one to miss out on summer side dishes like pasta salad and potato salad. It’s just one of those things I’ve come to accept and don’t worry too much about anymore. But, the other day my husband and I were out to lunch and he ordered a caprese pasta salad. Y’all have to understand that anything with mozzarella and tomatoes is my default choice at a restaurant. So I knew I had to try it. Luckily this particular blend was made without mayo and after only one bite I knew I had to recreate it and see if I could make a pasta salad dish I’d actually enjoy!

Busy Girl’s Bruschetta

We all have those weeks. Ya know, the crazy ones. We won’t go into detail but the bottom line is, even when weeks are crazy and life is out of control, girl’s still gotta eat! And just because it’s busy, doesn’t mean what you’re eating can’t still be deliciously gourmet tasting. 

Now that springtime has finally decided to show up, I am really excited to use fresh produce and there’s nothing better than fresh tomatoes in my book. I’ve had quite a few variations of bruschetta, including a goat cheese and red pepper bruschetta last weekend! But when I want that authentic Italian taste and summer feeling, I go for a very traditional bruschetta recipe.

Bruschetta ingredients are so simple and a lot of the time I have them all already. Sometimes I opt for fresh basil but this time I just used dried basil because I really wanted to hone in on the delicious tomato taste. Therefore I kept the distractions to a minimum.
