It’s a great day for a holiday, don’t you think?

Happy Thanksgiving to all of my fellow Americans! Today is one of my favorite holidays as a foodie, for obvious reasons – it’s all about eating!! I love taking a classic recipe and getting creative with it – putting my own spin on it, and really making it my own. I can’t wait to be able to share those kinds of recipes with my future kids and grandkids, and maybe one day in the future, they’ll call my recipes classics.

Of course, Thanksgiving is an all-day event, spent mostly in the kitchen and over the stove. But before you toss that turkey in your oven, why not treat your family to an equally impressive breakfast? I haven’t always been a sweet potato fan, and thinking about that now makes me a little sad because sweet potatoes are awesome and oh-so-versatile.

Now, I’m a huge proponent of breakfast, and when I was training for a marathon this spring, I started experimenting with foods to eat before and after long runs, including foods to eat the day before these behemoth workouts. (Because I quickly learned, if you’re running 16, 18, 20 miles? One meal the night before ain’t gonna cut it and give you all the goodness you need to make it through!)
