It’s a great day for a holiday, don’t you think?
Happy Thanksgiving to all of my fellow Americans! Today is one of my favorite holidays as a foodie, for obvious reasons – it’s all about eating!! I love taking a classic recipe and getting creative with it – putting my own spin on it, and really making it my own. I can’t wait to be able to share those kinds of recipes with my future kids and grandkids, and maybe one day in the future, they’ll call my recipes classics.
Of course, Thanksgiving is an all-day event, spent mostly in the kitchen and over the stove. But before you toss that turkey in your oven, why not treat your family to an equally impressive breakfast? This Kielbasa Breakfast Hash is easy, filling, and delicious, and will take no more than 30 minutes to make, giving you that much more time to prep for your big dinner!
Since taking these photos in late October, I have made this recipe 4 times for breakfast. I’m absolutely serious!! My husband is really big on breakfast, and it almost always has to include eggs in some way. The first time I presented this to him, he was pleasantly surprised, since my breakfasts are usually more carb-leaning (pancakes, French toast, & crepes, mostly.) It’s a very filling and flavorful breakfast, and contains plenty of nutrients to get you through your morning.
I have to note that, every time I’ve made it, the ingredients have been different, with the exception of the kielbasa – that protein has always remained constant, which is why I gave it this name. So feel free to stray from my original recipe, and add in different cuts of potato, more veggies, or even trying turkey kielbasa or chicken sausage.
No matter how varied you make it, I promise it will be totally satisfying!
Kielbasa Breakfast Hash - A filling breakfast, thrown together in 30 minutes!
Ingredients
- 1 (14 oz.) package kielbasa, cut into 1/4" slices
- 3 Tablespoons olive oil, divided
- 4 small potatoes, diced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon garlic powder
- 1 small onion, diced
- 1 small tomato, diced
- 1/2 cup fresh mushrooms, sliced
- 4 eggs
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 400 degrees F. Place oven rack on top third of the oven.
- In a cast iron skillet set over medium heat, brown kielbasa slices in 1 Tablespoon of olive oil for 5 minutes, flipping once.
- While kielbasa is browning, heat remaining olive oil in a large skillet set over medium heat. Add diced potatoes and season with salt, peppers, and garlic powder. Cook over medium heat for 8-10 minutes, until softened.
- Add onion to kielbasa skillet and cook an additional 5 minutes, until onions begin to become translucent.
- In the final 2 minutes, add tomato and mushrooms to kielbasa and toss, allowing flavors to blend.
- Remove both skillets from heat, then transfer potatoes to cast iron skillet with remaining ingredients. Toss to combine, then, using a spoon, make 4 indentations in mixture and crack an egg in each one. Top with shredded cheese and place skillet in preheated oven and bake for 9-12 minutes, until the whites of the eggs are set.
- Serve with toast or warm English muffins (or even on a burrito!) and enjoy!
