The good news is that you can celebrate the holiday any day! This fresh, delicious Blueberry Salsa with Homemade Tortilla Chips is a snack meant for every day, not just one! [Read more…]

Kielbasa Breakfast Hash - A filling breakfast, thrown together in 30 minutes! | Get the recipe on MyCookingSpot.com!

It’s a great day for a holiday, don’t you think?

Happy Thanksgiving to all of my fellow Americans! Today is one of my favorite holidays as a foodie, for obvious reasons – it’s all about eating!! I love taking a classic recipe and getting creative with it – putting my own spin on it, and really making it my own. I can’t wait to be able to share those kinds of recipes with my future kids and grandkids, and maybe one day in the future, they’ll call my recipes classics.

Of course, Thanksgiving is an all-day event, spent mostly in the kitchen and over the stove. But before you toss that turkey in your oven, why not treat your family to an equally impressive breakfast? This Kielbasa Breakfast Hash is easy, filling, and delicious, and will take no more than 30 minutes to make, giving you that much more time to prep for your big dinner! [Read more…]

Crock Pot Chicken Tortellini Soup // Erin Skinner from The Speckled Palate for My Cooking Spot

I realize it’s still the dog days of summer, and it’s super hot outside. And that, if you live in the South like me, chances are the weather’s not turning toward fall for at least another month to month and a half.

However, the incredibly hot weather hasn’t stopped me from wanting to eat soup this season.

And yes, I know this is strange, but sometimes, a girl’s gotta have soup! And apparently, any home-y soup is my comfort food of choice these days.

Summertime Corn Chowder // Erin Skinner from The Speckled Palate for My Cooking Spot

We got a ton of locally grown corn in our weekly farmer’s box recently, and I was a bit unsure what to do with all the goodness, as we don’t generally eat a lot of corn.

This harvest reminded me just how delicious corn is.

It also reminded me of how incredible food can be on the first meal… or frozen to become a meal for a later time.
